Samurai Gozen -毛利食-
Overview
"Samurai Gozen" is a reproduction of the
Kyooshoku (hospitality meal) eaten by
Motonari Mohri in Hiroshima in the 16th
century.The food at that time consisted of 3 types
of food served with rice and about 10 types of food served
with fruits and alcohol. They seemed to eat all night while
watching Noh.Although it is a special dish, it is also an
indispensable part for the generals to understand each
other. According to historical records, although this dish
contains many ingredients unique to the Warring States
Period, but their food consciousness and cooking
methods,such as "eat seasonal items" and "cook with sake,
soup and miso," were consistent with modern Japanese
cuisine.
